Bind without making a paste

Coarsely grate the zucchini without salting it first, then squeeze small handfuls in a clean towel. Leave the released liquid out of the burger mixture. Breadcrumbs absorb the moisture that remains, and a short chill gives them time to hydrate. Do not keep adding crumbs merely because raw turkey feels softer than beef. A lightly oiled griddle is a more forgiving surface for these patties than widely spaced grill bars.

Zucchini contributes texture as well as moisture. After squeezing it, chop any long strands so they do not protrude from the patties. Shape with slightly damp hands without kneading extra water into the mixture. Form the burgers on a tray before transferring them promptly to the prepared cooking surface. Keep raw ingredients refrigerated; clean hands, utensils and surfaces after contact, and use fresh plates for cooked food.

The recipe

Serves 4

Ingredients

  • 1⅓ lb / 600 g ground turkey
  • 5 oz / 150 g zucchini, weighed before squeezing
  • ⅓ cup / 35 g breadcrumbs
  • 1 small egg
  • 1 tsp prepared mustard
  • ¾ tsp fine salt
  • ½ tsp black pepper
  • 1 tbsp canola oil for the griddle
  • 4 burger buns
  • 4 lettuce leaves
  • 1 tomato, sliced

Method

  1. Grate and thoroughly squeeze the zucchini. Briefly mix with turkey, breadcrumbs, egg, mustard, salt and pepper. Refrigerate for ten minutes, then form four patties roughly ¾ inch / 2 cm thick.
  2. Preheat an outdoor grill for medium heat, with a direct cooking area and a separate unheated zone. Clean the grate before adding food. Keep the cooler side clear so pieces can finish gently or move away from any flare-up.
  3. Preheat a grill-safe griddle over medium heat and oil lightly. Cook patties for about 5–6 minutes per side. Turn carefully with a broad spatula, finishing in a gentler area if the outside browns before the middle is ready.
  4. Check several pieces at their thickest point with a clean thermometer. Poultry must reach 165°F / 74°C before leaving the grill; the approximate cooking times are not a substitute for this measurement.
  5. Measure the center of every patty from the side. Once fully cooked, place in freshly toasted buns with lettuce and tomato. Avoid pressing with the spatula: this squeezes moisture out rather than speeding safe cooking.

Storage

Refrigerate leftovers promptly in shallow containers, within two hours or within one hour above 90°F / 32°C. Keep at 40°F / 4°C or colder and use within three to four days. Reheat only the portion needed to 165°F / 74°C throughout; discard food left out beyond those limits.

Use grilling equipment only in its intended location and follow the manufacturer’s instructions. Timing is not a substitute for checking doneness.
