Stir the jar before measuring

Stored tahini often separates into oil above a dense sesame layer. Mix the entire jar thoroughly before measuring, otherwise one batch gets excessive oil and another mostly dry paste. Pale tahini generally tastes milder than a deeply roasted variety. Water is given as a range because products absorb it differently. Extra lemon juice does not replace water without also making the sauce much sharper. A deep bowl allows vigorous stirring without splashes.

Stir the tahini jar thoroughly before measuring because oil can separate on top. Scooping only that oil will not produce an even dressing. Tahini often tightens when lemon is added; this is expected. Work in water a tablespoon at a time until it becomes smooth and pourable again. Portion with clean utensils and keep the remaining supply refrigerated.

Loosen sauce after chilling

Tahini sauce often thickens further in the refrigerator. Stir one teaspoon of cold water into a finished portion, then check again; more water is easier to add than remove. A sauce made too thin can be thickened with a teaspoon of well-stirred tahini, but reassess its salt and acidity afterward. When using it beneath hot vegetables, spread only a little on the plate and offer the remainder separately. That leaves the unused sauce clean and cold for another portion rather than warming the entire batch under the food.

The recipe

Makes about 1 cup / 250 ml

Ingredients

  • ⅓ cup / 80 g tahini
  • 3 tbsp lemon juice
  • 1 small garlic clove, finely grated
  • ½ tsp fine salt
  • ⅓–½ cup / 80–120 ml cold water
  • 1 tbsp chopped parsley

Method

  1. Stir the tahini jar fully and measure 80 g. Combine with lemon juice, garlic and salt in a bowl. Expect the mixture to stiffen instead of immediately pouring in extra oil.
  2. Beat in cold water a tablespoon at a time, stirring firmly after each addition. At about 80 ml, check whether it falls slowly from a spoon; add more only if needed.
  3. Fold in parsley and refrigerate for ten minutes. Stir again and adjust with a little water. Keep it thinner for drizzling or thicker for spreading. Sesame is an essential ingredient, so this recipe is not suitable for someone with a sesame allergy.

Storage

Put leftovers into shallow covered containers and refrigerate within two hours, or one hour when the temperature exceeds 90°F / 32°C. Keep at 40°F / 4°C or colder and use within three days. Store dressing separately when possible, and reheat only the portion you plan to eat.

Use grilling equipment only in its intended location and follow the manufacturer’s instructions. Timing is not a substitute for checking doneness.
