Separate sweet and smoked paprika

Sweet paprika forms the base. A smaller quantity of smoked paprika prevents it from covering every other spice. Hot paprika is not an equal substitute for either type; its strength differs considerably between products. Garlic and onion powders should be dry and free-flowing. Do not simply mix damp spice clumps with fresh ingredients. The storage jar must be completely dry before filling. A clean dry spoon keeps moisture out of the remaining seasoning.

Seasoning does not replace a temperature check. A red chicken surface can suggest doneness before the center is safely cooked, so follow an appropriate recipe and use a thermometer. Start lightly on vegetables: the salt tastes different on watery zucchini than on a thick piece of meat. If a sweet glaze is wanted later, add honey or sugar separately near the end instead of altering the entire stored seasoning batch.

Adjust the heat rather than adding more rub

Paprika on dark meat does not always make scorching immediately obvious. An acrid smoke smell and black crust patches are reasons to move the food to gentler heat. Do not apply the mixture as a thick dry blanket. Vegetables often need a lighter amount, while a large meat cut has a different surface area. When serving a salty prepared sauce alongside, begin with less rub. An overly salty combination is difficult to correct at the table, while a clean unused seasoning portion can always remain available separately.

The recipe

Makes about 2 oz / 55 g seasoning

Ingredients

  • 3 tbsp sweet paprika
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp ground cumin
  • 1 tsp finely ground black pepper
  • 2 tsp fine salt
  • ½ tsp dried oregano

Method

  1. Measure all spices into a dry bowl. Break small dry powder lumps with the back of a spoon. Rub oregano finely between your fingers and add it.
  2. Mix thoroughly for at least one minute, including the bottom of the bowl. Transfer to a clean completely dry screw-top jar and label with ingredients and mixing date. Shake briefly before each use.
  3. For 1 lb / 500 g food, start with about two teaspoons seasoning. Apply thinly with a little oil and add extra salt only after considering the mixture. Take out the required portion before touching raw meat. Discard seasoning left in a raw-meat bowl rather than returning it to the jar.

Storage

Keep tightly closed in a cool, dry, dark place. Use within about eight weeks for stronger aroma; older starting spices may lose fragrance sooner. Discard if damp, moldy or unusually smelling. Never hold the jar over a steaming pan or insert wet fingers or utensils.

Use grilling equipment only in its intended location and follow the manufacturer’s instructions. Timing is not a substitute for checking doneness.
