Confirm accessory compatibility first
Read whether the grill supports a smoker box or another accessory and exactly where that item may sit. A hot metal container cannot be placed arbitrarily on burners, ignition parts or coated surfaces. Homemade foil packets are not approved for every appliance either. Use the wood form the accessory is designed to hold instead of assuming chips, chunks and pellets are interchangeable.
Plan an indirect cooking zone where the grill supports that arrangement. Food sits away from the active burner, with enough space for its size and for normal airflow. A compact single-burner cooker may have different limitations from a larger model. Loose metal plates are not a safe universal way to create an indirect zone that the appliance was not designed to provide.
Control heat without suppressing the burner
Start and preheat the appliance with the lid position specified in its lighting instructions. The smoking accessory needs sufficient heat to operate, but the food zone should not become uncontrolled while you wait for smoke. Measure conditions near the food and change burner settings deliberately. Do not attempt to run the gas supply below a permitted operating range in order to imitate a cooler charcoal fire.
Begin with a modest quantity of suitable wood. Smoke fading is not automatically a signal to refill the container immediately. Vegetables or poultry may need only a limited period of exposure. Handle or refill a hot accessory only as its instructions permit. Tongs with an uncertain grip are not a substitute for a secure lifting arrangement and appropriate heat protection.
Accept the ventilation design
A gas grill may be less enclosed than a dedicated smoker, so smoke can escape relatively quickly without indicating a defect. Do not seal ventilation openings with foil to keep more smoke inside. Those openings are part of the appliance's safe operating design. Adding more wood while restricting ventilation can worsen flavor and create problems rather than making the equipment perform like another type of cooker.
Check safe internal temperature and the desired texture just as you would with any cooking method. Hot smoking does not preserve a dish for unrefrigerated storage. Chill leftovers promptly and clean the smoking accessory and grease tray once cool. If the result tastes too strong, reduce smoke exposure on the next cook rather than trying to hide bitterness beneath more sugar or sauce. A restrained smoke note is often easier to build into a balanced meal than an overpowering coating.
Use grilling equipment only in its intended location and follow the manufacturer’s instructions. Timing is not a substitute for checking doneness.
